In the RV, sitting at the dinette - he doesn't want me up front because I get too nervous and gasp and stamp my foot on the imaginary brake and unnerve him. So I'm sitting here with my glasses on my head and trying to not look out the windshield :)

The cornbread mix is Marie Callenders or something like that - I can't get to it at the moment, but I wouldn't be surprised if it has SOME wheat flour in it. It doesn't bother me too much, so I don't pay close attention, but I'll look and report back later.

Well, if you INSIST on baking in an RV...find this in a store or order online. I no longer live near a store that sells this brand, but I am willing to pay shipping...and do the work...WORK!...so it must be good.

That is NOT real cornbread then...

Cornbread made by a southerner:

Southern Cornbread
2 cups self rising corn meal
¼ cup bacon drippings (may substitute liquid veg shortening)
1 ½ cups buttermilk

Heat oven to 450°, put shortening in cast iron skillet (or pan) and place in oven. Heat until very hot (needs to be smoking). Mix corn meal and buttermilk in bowl. When shortening is hot, pour it into cornmeal mix and stir. Pour batter into hot pan. Bake until crisp and done. (@ 20 minutes)

Served hot from the oven with LOTS of butter...fantastic.

(Notice this is NOT a sweet cornbread as sugar was too dear for most people when this recipe was created but the other ingredients were easily obtained). This was my great grandmothers recipe. (and I am 60, so we are talking late 1800's)

@southernlady: You make me nostalgic for my grandmother. Born and raised in Mississippi (pretty close to the turn of the last century) she too had a recipe for cornbread that was a lot like yours. And ones for collard greens and fried chicken that I still remember tasting 25 years after her death and nearly 30 after she stopped cooking. My one regret is that my mother "accidentally" threw away all of her recipes, but I have the memories though!
 
I just ordered Game of Thrones from paperbackswap - figure I have no chance of understanding the TV show unless I read the first book anyway.

We are going to haul the 5th wheeler up to Salmon, ID tomorrow night. Spur of the moment trip but should be fun. Need to get our fishing licenses because we will be camping on the river. PM me if you are in the area.
 
Sitting on the campgrounds throne - seems I've overwhelmed the on-board plumbing. Charles is headed for the office, in search of a snake. Ruh-roh.
 
Campground staff with a long snake to the rescue!! Now, the cleanup starts ... there was overflow. Charles is taking a shower, I will need one after I do the cleanup.

It is a learning process. I had been trying to use as LITTLE water as possible - that was stupid - we can dump the tank at any time, and keeping things liquidy is critical. Also, I bought but have not used, a kitty litter disposal system - I can put the TP in the system and dispose of it without putting it into the tank. And, if I use that, I can use nicer, softer, cheaper TP. Win-win.
 
All fixed, and cleaned. It wasn't "that" bad, but I used the 409 and then wiped everything down with disinfecting wipes.

Now doing more internet research on "the GEO method" and other detailed advice, thanks to Spiky.
 
We had to be home tomorrow to host my friend the internet guru for dinner. He had to cancel, so we're going to stay here an extra night :D . We have to move over one spot in the morning :-( but that's ok. We have plenty to eat and we walked to the grocery store to buy more drinks.
 
Well, we moved and re-leveled (that is tricky, with 1 x 6s and leveling blocks - thinking about installing jacks now ...) for our last night. And the TV went out for some reason. But we had a lovely extra day. On our way home now.

As last night was Friday of Labor Day weekend, the campground filled up all afternoon. Frankly, too many people and especially kids there for my taste. We COULD have spent one more night, but nah - time to go home.

We are going to Pismo Beach on the 12th - 15th. My daughter's boyfriend's birthday weekend, and their camping friends are going too - they are going to be camping ON the beach, and bringing quads to ride on the beach. We are going to stay at a respectable campground a couple of blocks away, and join them on the beach during the day. No way I'm risking getting this behemoth stuck in the sand!

Speaking of home: this is not a joke - while we were away, my daughter moved into the pool house with her dog and two cats, and Charles' daughter, her husband and their two year old moved into the guest bedroom. The lease on their house across the street is up tomorrow. OMFG.

My daughter was invited to stay for a month, because all summer I have been in the running for a job in the UK, and if we ended up moving there, I wanted her and her roommate (who currently lives with his parents, so he's flexible as to moving date) to rent our house, along with my son and his girlfriend (who are on a month-to-month lease). Unfortunately (or not - it could have been a disaster, but definitely would have been an adventure!), I came in second, which I didn't find out about until 2 weeks ago.

Why stepdaughter and hubby didn't find a place in time is a whole nother story, and I'm not happy about their lack of planning being OUR problem. We are NOT making it more comfortable this time by cleaning out the basement bedroom, while the baby sleeps upstairs - they will ALL be in the smaller guest bedroom. And notice that we disappeared during the week while they moved in - Charles is in no condition to be carrying anything heavier than a campstove anyway.

On the other hand, I will have help at the house during Charles' recovery from multiple hernia surgeries on September 23rd. So, I guess it could be worse.
