The “impending food shortage” stories must be getting to me. I’m not (exactly) hoarding. We just generally buy in larger quantities, in person or online, because going shopping isn’t easy for me. But now our regular fridge/freezer, which is generally more fridge/freezer than we need, plus the little 3 cu ft freezer, plus MiniSue’s college dorm fridge/freezer. They are all full.

What’s irritating about that is that it means that someone here is going to have to cook. COOK. Like...take food and turn it into meals. Domestic terrorism, plain and simple.

We have a very active egroup in our community, and a fair amount of turnover, as well as people trying stuff they thought they’d like in retirement, but changed their mind.

Some guy here sold his 2 year old really high end RV, and separately sold his basement freezer (goes in the slide out storage area under the RV). I’m using it as a third freezer.

Myself... I bought an instapot and learned to cook dried beans. The current specialties are moroccan stew (chickpeas) and great norhthern beans with onions and garlic

I can't get enough of the stuff. The moroccan stew has 7 spices. So far my weight is holding steady.

Oh, and never one for half measures, I bought 25 lbs of great northern beans

I wonder how much of the salad* I just planted can be frozen.

*I had a bunch of out of date veggie seeds that had fallen out of their containers...AND...the essential part...a BIG old clay planter pot. So we threw in some potting soil and “planted” the seeds…at first, in rows, but then I threw in all the leftovers. And then we watered it.

A quick check of our planters reveals that we are attempting to grow tomatoes, cucumbers, zucchini, oregano, parsley, onion and…a salad.

Diana! Liz!

I Convection Broiled tonight. That must make me a Sous Chef, at the very least!
