Thanks so much @southernlady! I will check out all of these resources. When using your meter to determine how specific foods affect you, how long should you wait after eating to test?
I tested before I ate and again at the 2 hour mark. There should be no more than a 20 point spread between those two readings. That's the ideal. As long as the reading isn't more than 30 points apart, it's an okay food to eat.

I found that my two favorite starches had two totally different results. Rice...I would still be a good 100 points over my pre-meal reading. Potatoes, OTOH, I never saw more than a 25 point spread between those two readings. Both are white starches. But I grew up on rice, not potatoes. My BIL who grew up on potatoes could eat rice no issue but potatoes were off his list.
