Yeah, not sure what to call it- and can't really post a recipe since I rarely measure.. so consider this a suggestion only. I wing so much in the kitchen anymore, and make things by a taste-n-go method.. which has its novelty, and drawbacks- like when you pull off something ah-*******-amazing, and never can really recreate it since you can't recall exactly what you did (bonus if you weren't exactly soberish while doing said culinary shenanigans.) Here's one I've become fond of making variants of, due to my love of all things bittersweet chocolate, and the need to use up stuff from my fridge.
Cream, oh about 1C or so
several blocks 100% cacao (Ghiradelli is good)
premier protein vanilla drink, almond milk, whatever other liquid, about the same amount
lots of scoops good unsweetened cocoa powder
packet of unflavored gelatin, or two depending on how much liquid you used
one serving of some super-yummy protein powder (I have several samples of Syntha-6 powders, they are awesome for desserts.. esp chocolate mint)
if you have some ripe avocado- throw it in..
couple dashes vanilla
lots of stevia, NuNaturals vanilla is a fav
1/4c++ erythritol (the only sugar alcohol that does not give me any issues, at all)
I warm the cream and choco, add the cocoa powder and the rest.. whip it up, stick it in the fridge, whip it once in a while or wait till it gels solid, then beat it with more cream if needed. Sometimes I add in a bunch of chia seeds too for texture while it's liquid. It's a fatty, protein-y, very decadent tasting dessert. Me & Todd both love it.. it started with just chocolate, avocados, a little cream and cocoa powder (can you say cupcake frosting?) and progressed to this mousse type thing along the way.
