If you are lucky enough to have some corned beef left over, here is a low carb, high protein, creamy recipe.
If you don't have any, it is ON SALE RIGHT NOW.
Bonus- it is lazy cooking using the crock pot.

Reuben soup
Ingredients
- 1 Med Onion – Diced
- 2 Stalks Celery – Diced
- 2 Lg Cloves Garlic – Minced
- 3 Tbs. Butter
- 1 lb. Corned Beef – Chopped
- 32 oz. Beef Stock
- 1 C Sauerkraut
- 1 tsp. Sea Salt
- 1 tsp. Caraway Seeds
- ¾ tsp. Pepper
- 2 C Heavy Cream
- 1 ½ C Shredded Swiss Cheese
- Pinch mustard
Instructions
- Heat slow cooker on high setting.
- To a large sauté pan, over low-medium heat, add onion, celery, garlic and butter. Sauté until soft and translucent. Transfer to slow cooker.
- To the slow cooker, add corned beef, beef stock, sauerkraut, sea salt, caraway seed, black pepper and mustard. Cover and cook on high for 4.5 hours.
- Add heavy cream and Swiss cheese and cook 1 additional hour.
