I've been hungry lately - the bored, anxious, mental hunger that can't figure out what I want, and just wants to nibble. I came up with an interesting late night snack yesterday that probably isn't the best, but neither is it the worst and it was quite tasty:

Open a can of garbanzo beans and drain
Put in bowl with Italian dressing with lots of stuff in it (I used this: http://www.wish-bone.com/products/robusto-italian/)

I didn't mean to eat the whole 15 oz can, but I did.

21 g protein
42 g net carbs (after subtracting 18 g of fiber)

I was kinda farty overnight, but ... it was tasty and nibbly and that's what I was looking for.
 
The bold dressing has bits of onion and red peppers in it, but fresh would be good too (but would take it out of the "quick" snack category by requiring effort to chop the veggies). But I just remembered I also have crumbled cotija cheese which would go well with it.
 
Chickpeas, crumbled feta and some kind of "Greek vinaigrette" dressing go great together. Better still with chopped onion and/or roasted peppers. The later can be had canned/jarred and sliced, so it stays just as convenient.
