This isn't really a recipe, but since it's food discussion, figured here's as good a place as any...

HOW HAVE I NEVER HAD CHORIZO BEFORE?
OMG

I saw some in Aldi and figured what the hell. I bought it and today, I squeezed it out of the casing into a pan with onions and peppers, cooked till done, and added beaten eggs. So good! After the I get the DS, I'll be adding some cheese for sure. Really good stuff! We have a lot of hispanics in my city and there's several latino markets so I may check those out, too.

Anyone got any good recipes using chorizo?
 
Oooh, I love chorizo. I have a super simple DS friendly recipe...

Queso Fundido with Chorizo

Serves:
4 to 6 servings
Ingredients
Vegetable oil, for oiling the baking dish
6 ounces chorizo, casings removed
1/4 cup chopped onion
1 large clove garlic, minced
2 cups grated Oaxaca or mozzarella cheese
6 flour tortillas, warmed
Directions
Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.

In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onions and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.

Put half of the cheese in the baking dish and sprinkle with half of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour tortillas for soft tacos. (My husband eats the tortillas and I just use a spoon :D)
 
If you ever get the chance - you must try Basque Chorizo -- totally different than the Mexican version. It's all over here in Idaho, because of our large Basque population, but it's awesome!

Use low carb tortillas, like Mission, and you can have the whole thing! Sounds really good!
 
Those Hispanic, Mexican, grocery stores save my butt almost every month. Here they have better, cheaper produce and meat as well. A couple weeks ago they had fresh garbanzo beans(chick peas). I had never seen those before.
 
The chorizo in the casin is not good quality. I live in AZ we only use that type in chili beans. You have to go to a hispanic serving grocery story get the fresh ground that has the consistency of hamburger meat. Fry it with eggs, potatoes add cheese and wrap it in a burrito.

I had a friend from Detroit who had never heard of it. So i just insisted they must have it out there and called random larger grocery stores there only 1 out of 5 knew what it was and NONE carried the stuff. I was amazed that they didnt know or carry the stuff. It is so good. Just dont get the too spicy kind after the DS. They have it in beef and pork. YUMMMM

Guess what I am having tomorrow for breakfast? I stopped today to get one but went with bacon instead.
