Freezing cream cheese?

Is this a thing? I feel a little crazy right now, because I've frozen all kinds of dairy before, and I feel like my mom used to freeze cream cheese when they were on sale and she would stock up to make a cheesecake or something in the future. So when I saw the giant block in Costco I grabbed it, cut it into 8 ounce squares and threw them in the freezer to take out one at a time as needed. Well, it turned out very badly. It's more like really thick ricotta now, totally grainy. Does anyone have a secret to fixing this or am I doomed to another 3 pounds of weird grainy cream cheese?
 
Same with American cheese. I buy a big block when I make Broccoli cheese soup. I freeze 2/3 of the block but only use the frozen stuff for more soup.
 
Yeah, soup, casseroles.. I buy the big multipacks of Philly from Sam's (so long as the use-by date is far enough out). I go through a lot of cream cheese so it's cost-effective. I do freeze some cheeses- feta, cheddar (will get crumbly, but no biggie), mozz..
