White beans with kale in an instapot

Ingredients

1 Red onion diced
2 c carrots diced
5 stalks celery diced
1 c shiitake mushrooms diced
2 T garlic diced
1lb dry great northern beans
8 c chicken broth
2 sprigs rosemary
8 sprigs thyme
1T black pepper
1 t red pepper flakes
1/4 c olive oil


1 lb baby kale
1/2 c lemon juice
Parmesan cheese .. extra

Prep

1) sauté the onions in olive oil for 10 minutes in the pot while preparing the rest

2) put everything else , except kale and lemon, in the pot, set pressure to high, and cook for 32 minutes , pressure release natural

3) open the pot and add the kale and lemon juice, and let sit for 5 minutes

4) store, or serve with grated parmesan

Notes

I was looking for a way to get more greens into my diet, and this white bean soup came to mind... enjoy

If you can stand the carbs in the beans, it's pretty nutritious by my count. The beans give it fiber and protein, the veggies are always good, and the spices are just enough. I say sprigs because I cut them from the backyard spice tub garden. If dry, my guess is 1 t each of rosemary and thyme.

For those of you worried about kidney stones, the kale is low in oxalate, especially compared to spinach, which would also taste good as a green substitute.

Oh... and it tastes great. Makes about 4 1/2 quarts. I freeze three of them
