I am no longer jealous of your proximity or talents for making Mexican food. Today, I roasted poblano peppers and made crispy chili rellenos. I'll admit to using canned green chili, yet this little culinary adventure has boosted my confidence and I just may to try to make other goodies. DH likes a good green chili stew, and it's not an intimidating prospect as it was before today. The only problem may be obtaining fresh ingredients. Or maybe I'll have to substitute some good ol' TN catfish for pork. (Not really :sick:)

what is it about cooking (and eating) that is so fraught? I am also intimidated about both and have spent years avoiding cooking so that I'm not very good at much of it. which makes for a vicious circle, of course.

K9, I'm glad you had a good result and your confidence has gone up!

For me, it's just not related to cooking. My mother was very critical and very impatient with us while teaching us just about anything. Therefore, I pretty much shy away from anything relating to domestic skills. I married a man who cooks, lucky me. My sister took up quilting in her early 60's so perhaps there's hope for me to learn to make more than simple things in the kitchen. I understand (somewhat) how Mom's mind worked, yet some emotional scars run deeper than others. My sister and I have decided that we no longer have to meet our parents' expectations of perfection, so I may also dust off my sewing machine as well as experimenting in the kitchen.

Sewing machine? Be still my heart. I own and operate: a Nolting longarm (new), a 1950s Singer, 2 very early Singer Featherweights, and a The Free Sewing Machine early treadle. I am currently treadling a baby quilt for my future first grand child.

I taught myself. My mother and older sister were perfectionists. I am not. I get much more done than they ever have. My quilts are used well and used up. Theirs are hanging on walls like art. Some of my better ones are, but most are made from Goodwill mens shirts.

Just do it. And do it YOUR WAY.
 
Sheanie Thanks for the encouraging words. My sister made me a quilt for my retirement with beautiful shades of purple. Too much white, including the backing, to use around the dogs. While in my travels as a consultant, I bought several quilts for wall hangings. Who knows? My sister advised me to start simple with simple strips. BTW, if you've never been to the National Quilt Museum in Paducah, KY, it's worth the trip.

My sewing machine is old, maybe 40 years. I don't know if I can get it cleaned/serviced locally, but will investigate it. I have my grandmother's old treadle machine that still works. My sister had it stored until I could get it here. She was tempted, but decided against it.
 
Talk about misrepresenting my skill set!! I apologize. The ONLY decor in my kitchen says,”I kiss better than I cook.”

I’m a sketchy cook, at best. And Mexican food? I grew up with such culinary delights as pork chops, meat loaf, tuna casserole and...on very poor Fridays...the abomination known as creamed tuna on toast. (Which I actually like.). I’d never heard of cilantro, and still don’t know what a chipotle is.

So, I defer to your expertise!
