Meat from one deli chicken, placed in bottom of well buttered casserole dish
Broccoli, one head (or to taste) steamed tender but not cooked completely
1/2 Cup diced onion, sautéed in butter
2 Cup Hellmann's mayo
1 can cream of chicken soup
1 teaspoon lemon juice
1/2 teaspoon curry powder
8 ounces grated cheese (mozzarella & Colby is delicious)
1/4 cup grated parmesan cheese

Layer meat then broccoli and sautéed onions. Mix remaining ingredients except parmesan cheese. Pour over meat & vegetables, then sprinkle top with parmesan. You can also add more cheese, if desired (I always do).

Bake 25 minutes at 350 degrees.

NOTE: The chicken is already cooked.
 
omg. My mom mentioned making this on fb tonight. It was one of my childhood faves. Her recipe is a tad different but omg. So yummy! I just bought the stuff to make it next week for tea. mmmmm
 
yeah thats the difference with my mom, I didn't do a direct comparison but omg Im so happy one of my childhood faves is DS friendly sans Rice and Onions :)
 
LOL, I never knew the rice variation. We low carb it here so naturally that I don't even buy noodles, rice, or other starches. My grocery cart is usually full of proteins and fats, with a few fruits and vegetables.
 
Puff pastry lives in the UK :p I have some to use up before my op because omg I LOVE that stuff lol. I usually stuff if with left over crockpot beef stew and my boys LOVE IT :)
 
I'm making chicken divan tonight and have customised it for high fat protein and cannot wait to taste it! 5lbs of chicken breast, 6 cans condensed soup, 1/4 cup curry (I found after living in the UK and eating Indian currys a lot, the 1tbs was not noticeable at all to my tastebuds lol), 4 cups mayo, 2T of lemon Juice, and 4lbs of cheese...half mixed in and half on top...all on a bed of long stem broccoli...it smells AMAZING!!!! I made enough to last all week long! And I'm happy I figure out how to make it gooey enough to not need it with anything :) mmmmmm.
 
When I make this next time, I will use less mayo. I used Duke's mayo, not Hellmans mayo, and there was too much oil floating around the casserole. Just too greasy :( I guess I should have stuck with the recipe.
 
omg. Was a total success! Now I need to write it down lol. Mine doesn't have the butter or onions....that might have made liquid appear. Mine was like creamy gold. :) Glad to already have a post op go to favourite :)
