Gorgonzola Sauce

I was just watching Ina Garten and she was making this gorgonzola sauce and I thought, "Hey, this looks low carb", so here is the link to the recipe:

It only has cream, gorgonzola cheese, parmesan cheese, salt, pepper, and parseley. Looks yummy! I'm going to have to try it. I wonder if it would be good with a different cheese? I don't think I have ever had gorgonzola.
 
I love Ina Garten/Barefoot Contessa! And her style of cooking, which combines french country, hampton/classic, pretty much works for us DS folks. This is basically a style of alfredo, I've made these a lot, though I do like gorgonzola which in the bleu cheese family, just a lot mellower. Asiago, gruyere work well too, fine hard cheeses that melt well work best.
 
That looks super yummy!! My mind is racing with ideas of things that can be smothered :)
 
Gorgonzola is a bit of an acquired taste, so give it a try, you might like it! That would be very good with a nice strong asiago, I think.
