So, these days MY cut of choice is ribeye, but "tripas" is something I heard a lot growing up. (My LAPD grandfather was a butcher on his days off.) And tongue was used from time to time, as well as liver.
Soooooo...if you know anyone who might use those cuts of meat, stop them.
