Here is my version of Cinnamon Roll Bread, adapted from a paleo version I found on line. You can further adapt it by switching out the honey and sugar with Splenda or Stevia, using another fruit instead of banana, or whatever your little heart desires. This version has become a favorite of my family, there are no leftovers.

Cinnamon Roll Bread

2 large eggs beaten
1 very ripe banana, mashed
4 T honey
1/4 cup melted unsalted butter
1 t vanilla
1 1/4 cup almond flour (see my Cheddar Bay Biscuit recipe for how to make almond flour cheaply)
2 t cinnamon
1/4 t salt
1 t baking soda
1 t baking powder

Combine dry and wet ingredients separately, then combine. Spread into a round, well greased cake pan. Top with the following:

3 T melted butter
3 T sugar
4 T quick oatmeal, uncooked
1 T cinnamon

This topping will sink down a little during baking. This is desired.

Bake at 350 degrees for 25 minutes, or until edges are crispy and middle springs back when touched.
The banana and butter keep this bread moist into the next day or two.
