Frittata/Crustless Quiche

The main difference between frittata and quiche is crust. You can make any quiche into a frittata by omitting the crust, starting the frittata on the stove and finishing in the oven.

Just as an example:

10 eggs
smoked Gouda
pepper
garlic
cream
mushrooms
bell pepper
onions or chives
bacon, ham, or any cooked meat(s)
any other veggies you want
a little water


Combine everything in a big bowl and mix. Save out some of the Gouda.

Spray some nonstick stuff into a nonstick pan, dump in your ingredients, and cook over a burner till the frittata starts to solidify. Then sprinkle the Gouda on the top and bake till cooked through in a 350 degree oven. Usually a half hour or a bit longer. Some people flip them but it's really not necessary.

Another way to do this is in a muffin tin. Then you get cute little frittatas. Individual servings. Use the nonstick spray and coat your muffin tin, then add your mixture and bake till done.

A fancy way to do this for a breakfast buffet is to use a bundt pan. If I do this I usually do a cheese sauce to pour over the top right before serving. Do the veggies smaller for this one so it slices well for serving. This takes longer to cook than the others.
