This started off as a copycat recipe to the Olive Garden's Alfredo....and then there was cream cheese! That has made all the difference. I OD'd on this during my Atkins phase but I'm actually looking forward to having it again since the 50g of fat per serving won't hurt me this time. About 15-17g of protein per serving, so instead of pasta it would make a pretty darn good protein meal over some sautéed shrimp or scallops for early folks, and it's yummy on chicken or beef too for those able! Makes 6 servings.


Better than Olive Garden's Alfredo

1/2 cup butter
2 tablespoons cream cheese - I've been known to go for half a package (4 oz) when I want it really thick
1 pint heavy cream
1 teaspoon garlic powder
salt
black pepper
Red pepper flakes (optional)
2/3 cup grated parmesan cheese

Directions:

1) In a medium saucepan, melt butter.
2) When butter is melted, add cream cheese. This takes some careful monitoring so it doesn't scorch.
3) When the cream cheese is softened, add heavy cream.
4) Season with garlic powder, salt, and pepper. Garlic powder works better at infusing garlic flavour in this instance. I usually add a half teaspoon of red pepper flakes for a bit of spice.
5) Let it simmer for 15-20 minutes over low heat, stirring constantly.
6) Remove from heat and stir in Parmesan until fully incorporated and melted.
7) Serve over hot seafood, veggies, or meat of your choice
