Spinach & artichoke dip

I was thinking, spinach & artichoke dip could be a good DS dip if you can handle the spinach and artichokes.
I have 2 favorite recipes.

EASY/LAZY RECIPE:
4 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (14 ounce) can artichoke hearts, drained and chopped
10 ounce-ish of Alfredo pasta sauce
1 cup shredded mozzarella cheese
1/3 cup grated Parmesan cheese
1/2 (8 ounce) package cream cheese, softened
Mix all together. Bake at 350 for 30 mins or until cheese is melted and hot throughout.

SLIGHTLY MORE FANCY SHMANCY RECIPE:
1 (8 ounce) package cream cheese, softened
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese
1/4 cup grated Romano cheese
1 clove garlic, peeled and minced
1/2 teaspoon dried basil
1/4 teaspoon garlic salt
salt and pepper to taste
1 (14 ounce) can artichoke hearts, drained and chopped
1/2 cup frozen chopped spinach, thawed and drained
1/4 cup shredded mozzarella cheese
Mix all but mozzarella together. Place in baking dish and top with mozzarella. Bake at 350 for about 30 minutes or until cheese is melted and hot throughout.

Both are great. Make yourself some cheese crisps and dig in.
 
First of all, I love you because 2 days ago I said to my husband that I couldn't find my recipe for hot artichoke dip and I had forgotten what went in it, but it sounds like your schmancy version (I always loved that word!)
But I hate you a little because the reason I had brought that up was because we were in Costco and they had samples of a spinach artichoke dip that I had 2 of (yes, mine and his!) balanced on 1 cracker. BUT about 2 hours later the dip let me know that it did not like me back! Boo :mad:
 
You could always try the homemade. Who knows what was in the costco stuff? I hope you can eat it, cause it's so darn good!

Maybe there was a little sumthin' sumthin' extra in the costco dip? Hoping so anyway b/c I'm all over the schmancy version myself. Thx for sharing these recipes Cate. Trader Joes run for me tomorrow morning!
 
After I actually get the DS this month and recover enough to be able to eat solid foods again, count on recipes. I love to cook.
 
Come back to spinach in a few months Lauren... maybe your 1 year anniversary? What the heck, this would be yummy just as artichoke dip.
